Here is a review of my visit to "Mokdo Bingzhuyang" (牧都冰煮羊) in the Xincheng District of Hohhot—a great spot for a hearty dinner that captures the true local vibe on the first day of my trip to Inner Mongolia. "Bingzhuyang" is a traditional Inner Mongolian style of lamb hotpot where fresh lamb is placed atop a bed of ice in the pot and cooked together. I enjoyed a special first-night dinner in a setting that truly exudes the local atmosphere.

📸 Exterior: The "Mudu Bingzhuyang" sign stands out amidst the bustling, vibrant street. Thanks to the brilliant lighting, it was easy to spot even from a distance.

 

 

 

1. Table Setup & Self-Service Sauce Bar As soon as I sat down, the large round table was filled with a generous spread of ingredients. Impressive Basic Spread: The table was packed with items centered around a pot featuring striking blue traditional patterns—thinly sliced ​​tofu, assorted mushrooms, vegetables, glass noodles, and even fresh watermelon for dessert. Customizable Sauce Bar: A wide array of sauces and spices—such as sesame paste (majiang), cilantro, minced garlic, chili oil, and soy sauce—was neatly laid out. It was fun to mix and match them to create my own special dipping sauce tailored to my taste.

 

 

 

2. The Meeting of Ice and Fresh Lamb: Bingzhuyang (冰煮羊) The highlight of Bingzhuyang lies in the ingredients inside the pot and the unique cooking method. Fresh Lamb and Ice: A generous layer of clear ice is placed at the bottom of the pot, topped with fresh, bright-red, cubed lamb and vegetables such as tomatoes, green onions, and carrots. Why Cook with Ice?: As the ice slowly melts, it prevents the meat from contracting, resulting in a texture that is exceptionally tender yet pleasantly chewy.

 

 

 

 

3. A Hearty, Nourishing Meal Simmered to Perfection 🍲🍺 Cover the pot and let it simmer thoroughly; as the flavors meld into the broth, the delicious *Bingzhuyang* (Ice-Boiled Lamb) is ready to enjoy. Rich and Tender Flavor: Once the lamb and vegetables are simmering in the ice-based broth, add crown daisy greens and mushrooms, cooking them briefly before eating. There is absolutely no gamey odor; instead, every chew brings out the lamb's unique savory and clean flavor profile. Pairing with Local Spirits: Pairing this delicious lamb dish with a glass of local alcohol washed away all the fatigue from the first day of the Inner Mongolia trip.

 

 

 

💡 Overall Review: Day 1 Dinner in Inner Mongolia *Bingzhuyang* was one of the dishes I was most looking forward to trying in Inner Mongolia, and it exceeded all expectations. Unlike standard hotpot, cooking with ice made the lamb’s texture incredibly tender. I was also highly satisfied with the self-service sauce bar and the neat selection of side dishes. If you want to taste authentic Inner Mongolian lamb cuisine near Xincheng District in Hohhot, I highly recommend "Mokdo Bingzhuyang" (牧都冰煮羊店)!
